Chicken and Tortellini Soup


  • 12.7 ounces of thawed chicken thighs
  • 7 ounces of pre-chopped mirepoix mix (onions, carrots, celery)
  • 1-2 tablespoons of olive oil
  • 16 ounces of low sodium chicken broth
  • 8 ounces of organic bone broth
  • 8-10 ounces of refrigerated cheese tortellini
  • 2-3 cloves of garlic (adjust to taste)
  • 1 fresh chili pepper (optional, for spiciness)
  •  Salt and pepper to taste


1. Begin by heating olive oil in a pot and sautéing the mirepoix mix until softened.
2. Add the thawed chicken thighs to the pot and brown them on all sides.
3. Pour in both the low sodium chicken broth and organic bone broth, and bring it to a boil.
4. Let the soup simmer for about 20-30 minutes, or until the chicken is fully cooked.
